Fall Favorites: Grilled Butternut Squash Salad


Hello Fall! I’ve been consuming butternut squash at a feverish pace but for this salad recipe I posted on I decided to grill it because well Robyn does specialize in all things grilled after all!

It turns out grilling squash is really easy – it actually took less time to grill than it takes to roast it in the oven. I lined a pan with some foil and drizzled the butternut squash with olive oil, salt & pepper. Cook it on the lowest temp indirect heat for about 20 minutes {turning in between} and then moved it to direct heat for some amazing grill marks. 

It’s amazing on it’s own but I also grilled up some red onions and the flavor combination worked really well. This fall inspired salad is made complete with candied walnuts, blue cheese, apples + a balsamic glaze.
