When one of your favorite local chefs and one of your favorite beverages announce they’re working on a flavor collaboration, if you’re like me you jump for joy and then quickly jump in your car for a taste.

That’s exactly what I did earlier this week when I heard Chef Clay Conley of Buccan and onli™ Beverages partnered together to create a new flavor for Onli’s already eclectic line-up.

The flavor – Black Tea Tangerine Ginger is exotic with hints of ginger and kiwi, but is all South Florida with citrus flavors that burst onto your palate.

Whether you drink it alone with ice or mix it up in your favorite cocktail you’re in for a refreshing treat.

Chef Conley traveled  to the flavor house in Kentucky and worked for two days to get it just right.

“This is a longer process than creating a new menu, after each change we wanted to make we had to wait two hours to taste the batch again!”, says Chef Conley of the flavor creating process.

Onli’s Founder and CEO, Nadav Haimberg was present throughout the creative process. “Chef knew what he wanted I was there more to lend input and guide him towards flavors that work well, for instance the ginger extract level is at a higher level than usually found and the hint of kiwi which you don’t necessarily taste wouldn’t make the drink what it is without it”.

All the science and days of tasting paid off.

Head over to Buccan and its sister restaurant, Imoto in Palm Beach and have a taste of the cocktail that was inspired by the signature flavor. When at Buccan  make sure you have a bite of their short rib empanadas and tuna tartare with what I’m sure will be your favorite new cocktail.

Chef Clay Conley’s Black Tea Tangerine & Ginger Cocktail

Ingredients:
1 tangerine
1 tsp. ginger puree
.5 oz lemon juice
.5 oz simple syrup
2.5 oz black-tea infused vodka
A splash of onli Black Tea Tangerine Ginger Sparkling beverage
Candied ginger

Directions:

Tea infused vodka: Add 1 tbs. of loose black tea to a liter of vodka and let steep for three hours.

Muddle 1 tangerine (quartered) into the ginger puree.  In a cocktail shaker filled ¼ with ice add the lemon juice and simple syrup, tea infused vodka and along with the tangerine and ginger puree.  Shake and serve in a tall glass filled with ice. Garnish with a slice of candied ginger.
